I was excited when Judy announced that Cinnamon was the challenge for last week. I knew that I was finally going to make something! And then, when it was time to post the recipe, I realized that I hadn't taken the time to make mine. So here it is, a few days late.
I made Apple Salsa! It is a Pampered Chef recipe from one of their smaller seasonal cookbooks from quite a few years ago - I started making it when I was in this condo so no more than 11 years ago.
The ingredients are a red and a green apple, lemon zest and lemon juice, craisins, caramel ice cream topping and cinnamon. And I eat it with baked tortilla chips.
Chop the apples. I cut mine into smaller sections and then use the cutting board and the chopper to chop several chunks at a time.
It's a bit easier to use the cutting board than the little chopper base.
And I have to deal with the dogs nagging for apple bits. Of course, they get at least one each!
Once both apples are chopped, add the zest from the lemon (I zest the whole thing) and the juice from the lemon (again, I use the whole lemon), about 1/2 cup of the caramel and some cinnamon.
I mixed it up some and then added the craisins and a bit more cinnamon.
And enjoy with the baked tortillas. YUM!! This is especially good after it has chilled for a couple of hours so that the flavors all mix.
